Excellent question to remind us all that conventions in the Jabber/XMPP world may not be clear to those who do not use Jabber. Jabber/XMPP networks use a "Jabber ID" or "JID" to uniquely identify a Jabber user or group chat. For whatever reason (user familiarity?), the creators of jabber chose to use the email address form. So a JID is:
<username>@<servername>
york at jabber.isoc.org
dyork at jabber.org
In order to user Jabber, you do need to have an account with some Jabber server. Note that GMail provides an XMPP interface and so if you have GMail you can use a Jabber client and login to your gmail account. You can also register a free account at http://www.jabber.org/ or one of the services listed on http://xmpp.net/ (not sure if all there provide free accounts, but many do).
There are MANY Jabber clients out there ( http://xmpp.org/xmpp-software/clients/ ). Many folks on Macs tend to either use the built-in iChat (or the new "Messages") or Adium ( http://adium.im/ ). On Windows I know friends of mine use Pidgin - http://www.pidgin.im/ There are also many web-based clients for those who just want a simple browser solution.
Group chats / chat rooms on Jabber use the same email-like format:
<chatname>@<servername>
globalinet3 at conference.isoc.org
As Peter Godwin noted below, different Jabber clients accept JIDs in different ways. Some allow you to simply enter the JID as an email address while others require you to take apart the JID and enter the components into different fields.
By the way, thanks for enabling the Livestream chat. As a remote attendee I was watching the Global INET sessions today and found the Livestream chat to be quite useful as it was nicely integrated in with the display window.

P.S. And yes the similarity of JIDs to email addresses can be confusing at times. Over the years I've had a couple of cases where people told me they couldn't get email to me... and it turned out that they were emailing the JID for one of my accounts.
